LA “GUERRA DEI CASONCELLI” di Maira Alcantara

Esistono due paesi confinanti nella campagna Bresciana: Longhena e Barbariga, due piccoli comuni che hanno come tradizione la produzione di Casoncelli. Possiamo confermare che fra i due comuni esista una vera e propria  bonaria competizione, una sorta di  “guerra dei Casoncelli”. Per  sfatare la confusione che esiste fra i due prodotti che risulterebbero essere  in realtà molto differenti fra loro nonostante la vicinanza dei due territori intervisteremo un esperto produttore di Casoncelli di Longhena, Pierdomanico Ferrari. L’imprenditore di Longhena con una grande esperienza in fatto di produzione di Casoncelli tipici, ci spiegherà le differenze fra i due prodotti, i suoi (di Longhena) ed i Casoncelli di Barbariga. La pasta del nostro tipico “Casoncello di Longhena” è “tirata” molto fine. I nostri Casoncelli fra l’altro sono prodotti con un’alta percentuale di farina di grano duro in grado di offrire al prodotto una piacevole consistenza della pasta, nonostante sia “tirata” ad un decimo di millimetro. I tipici casoncelli di Longhena di nostra produzione hanno il pregio di poter avere la pasta contenente fra l’altro farina di grano prodotto dalla nostra azienda agricola del tipo “Senatore Cappelli”. Per quanto concerne il ripieno è realizzato con prodotti assolutamente locali. Il ripieno dei nostri Casoncelli cono in effetti realizzate con “erbette” prodotte nel nostro comprensorio e carne del pregiato “cappello di prete” lessata e macinata. Per nostra scelta la produzione di Casoncelli è a filiera corta, la nostra azienda agricola produce tutto quello che può  per la realizzazione del Casoncello , quindi è in grado di offrire un prodotto assolutamente tipico e genuino.

BARBARIGA: I Casoncelli del vicino comune di Barbariga hanno caratteristiche differenti da quelli di Longhena. Prima di tutto hanno una conformazione diversa, a triangolino con le code più corte, che in genere raggiungono i 6 – 7 cm. La pasta è in genere di grano tenero e “tirata” più spessa, non è così fine come i Casoncelli di Longhena. Il casoncello di Barbariga a mia opinione non sarebbe da definirsi un prodotto locale in quanto anche il ripieno non è composto da prodotti locali. il pane, il formaggio ed prosciutto cotto soprattutto che generalmente contraddistingue questo tipo di casoncello non è  prodotto nella zona. Nel bresciano che io sappia non si producono prosciutti…. La pasta quando cotta risulta essere meno consistente al palato proprio perché realizzata con farine di grano tenero.  Possiamo dire quindi che dopo questa spiegazione dei dettagli tecnici che contraddistinguono i due prodotti, che i Casoncelli di Barbariga risultino essere davvero differenti da quelli di Longhena, dopotutto in Italia la varietà dei prodotti culinari più o meno tipici risulterebbe essere da sempre la più varia al mondo. L’ Azienda Agricola Franco Ferrari non offre solamente i Casoncelli di Longhena ma oggi abbiamo aggiunto una gamma di tipi di pasta prodotta come sempre il più possibile a “filiera corta” per mantenerne la genuinità. In questo caso proponiamo  una svariata gamma di prodotti a base di pasta di Canapa come Fusilli, Pipette, Casoncelli. Questo tipo particolare di prodotto sta riscuotendo un grande successo, gli estimatori della pasta di Canapa sono sempre maggiori. Sempre di nostra produzione offriamo i “gnocchetti  sardi Malloreddus”  sempre prodotti dalla nostra azienda. Abbiamo i Casoncelli al Bagoss, Prosciutto e Spek , Casoncelli di Longhena al brasato, alle erbette. Prodotti con pasta tradizionale come le “Pipe rigate”, fusilli, tortellini al crudo, tagliatelle ed i quadrucci al crudo. Siamo in grado di offrire una vasta gamma anche di prodotti realizzati con paste integrali oltre che un tipo di gnocchi di patate come le “Gnocchettine” un particolare tipo di gnocchi di piccola dimensione, particolarmente morbidi e saporiti. La genuinità dei nostri prodotti ci offre la possibilità di poter vendere Casoncelli e pasta anche presso alcuni mercati di Campagna amica.  Nella nostra politica aziendale esiste solamente spazio per la produzione di pasta ottenuta ripeto a “filiera corta”, puntiamo sulla genuinità assoluta. Questa scelta ci sta dando ragione, d’altronde in un mondo nel quale quasi tutto risulterebbe essere “artefatto” e piatto al palato perché prodotto industrialmente con l’ Ausilio talvolta della “chimica” è normale che il pubblico richieda ancora di potersi cibare con prodotti genuini in modo da cercare di mantenersi in salute e di conoscere il prodotto di cui si stia cibando.
